My Day in 6 Words 4/11


Fantastic Fajitas for my favorite husband! 


These are super easy and you can add or take away some of the spice to meet your taste, but they're already pretty mild (I promise!).
For the filling you'll need:
1lb. Chicken, sliced into stips (or cubed if you prefer)
1 medium onion sliced
A variety of bell peppers sliced.
1 lemon
Olive oil
1/2 fajita seasoning packet
1 tsp. Cajun seasoning
1/4 tsp. Paprika
1/4 tsp. Cumin
Salt and pepper to taste.

Heat the olive oil and the lemon to a sizzle.
Add the chicken and the onion and cook the chicken through on med. heat.
Add all the seasonings and the peppers and saute on low until the peppers are heated through and mildly soft.

Heat fajita shells.
You can heat them easy peasy in the microwave in a damp paper towel for 15 seconds per shell.
Or you can do it the "real" way in a skillet over a very small coating of oil.

Toppings:
You can use whatever you like but My faves are 
black olives
cheddar chz
grape tomatoes
and romaine lettuce.
